Coconut muffins

Hello all,

after a three day pineapple only frenzy, I needed something with substance for breakfast. And since I am still reacting to honey, I made some bland (but still awesome) muffins.

You need:
1 cup almond and coconut flour (half and half)
2 eggs
1/4 tsp baking soda
1/2 tsp aplle cider vinegar
(1 Tbsp honey)
Mix all the liquid bits first, thenadd the dry, fill in 4 muffin trays. Bake at 170 for 12-15 minutes, let them cool down. I had mine toasted, with yoghurt cream cheese and cashew butter, alongside more pineapple.
You can also add some pineapple into the batter, if you like. After over 6 months of no bread etc., this was so awesome.

Greek gyros with cacik and green beans

Hello all,
Today you get a lovely SCD legal greek dinner, which is also highly effective against parasites!


You need:
2-3 chicken breasts
4-6 cloves of garlic
2-3 medium onions
fresh green beans
1 big tomato
1 piece of cucumber
yoghurt
salt, pepper, thyme, oregano, paprika
lemon juice
Olive oil


-Cut chicken breasts in small slices, slice 1-2 onions, 2 garlic into slices as well. Put into a bowl with olive oil and lemon juice, salt, pepper, paprika, oregano and thyme, marinade for a few hours (or overnight)
-For the cacik , grate cucmber, press 1 garlic and mix with yoghurt and some salt.
-Peel the tomato, clean up the beans.
-Heat olive oil in a pan, add the last cut garlic and onions to it, as well as the beans, and fry on low heat for 20 minutes (until the beans are done, evt add some water). Add cut tomato, thyme, oregano, salt and pepper, let it simmer for 5 more minutes.
-Heat another big pan with oil, add the marinated meat and fry. Serve with the warm gren bean salad and the cacik.


Remember: garlic is the problem of the other people ;)

Charlotte's spinach pie

Hello all,
I want to share this awesome recipe I have found on SCD recipe.

you need:
lots of spinach (i halved my ingredients, I took 1/2 package fresh spinach. you can also use silverbeet)
1-2 eggs
dripped yoghurt of 1/2 liter yoghurt
basil, rosmary, thyme, garlic
Salt and pepper
some almond flour
some butter
some grated parmesan and/or cheddar

wash the spinach, blanch it, dran the water away, chop it up.
Beat the eggs in a bowl, mash with the dripped yoghurt, add the spinach, herbs, a Tblsp of almond flour.
Spread onto a buttered pie pan, or a baking tray. I used a bread loaf baking tray.
Springle some butterflakes, almond flour and cheese over it.
Bake at 200°C until golden.
Serve with carrot salad.

Yummy spring veggie pan with eggs

Spring is here (okay, autumn on the northern hemisphere, sorry), and what is better to springclean your body than Asparagus?

You need:
1 bunch of aspargus
1-2 big carrots
1-2 courgettes
some green beans or peas
1 egg per person
garlic and some fresh chives
salt and pepper

Boil eggs until hard, peel and put aside.
Wash asparagus, cut off the bottom and peel  the lower 1/3. Peel and grate the carrots, wash and grate the courgettes. Peel the garlic.
Heat oil in a pan, and add the asparagus and the beans (if you chose fresh ones), fry them gently for 5 minutes. Add garlic and other veggies, fry until golden.
Add salt and pepper, and serve with egg halves and sprinkle with chives.
Dig in!

Muesli to kill for

I have a great new breakfast! I love it!

You need:

yoghurt
some blanched almonds
some pepitas
some diced papaya
some fresh coconut
cinnamon, cloves


Mix and enjoy! if you are too lazy to chew, you can throw it into a blender until it is like porridge. I you are not strictly scd, throw in some freshly ground linseeds or psyllium husks.
Exchange the papaya with pomegranate or other fruit, if you want. Just remember to drink enough, since it is very rich in fibre!

Turkish mince meat with pomegranate seeds

You need:

some fresh pomegranate seeds (careful, use silicone gloves , the color stains like hell)
mince meat (beef, or better, lamb)
1 clove of garlic
oreganum and rosmary
courgette or eggplant
yoghurt
olive or coconut oil

Fry meat with rosmary in a pan, then add diced courgette. Add oreganum, salt and pepper. Put onto a dish.
Press the garlic into the joghurt, add the pomegranate seeds, and pour over meat, serve.
If you can eat walnuts, please add. I had it with pepitas, but they are not a great exchange. This dish needs walnuts, if tolerated. You can also use this as a topping for a pizza, if you cannot have cheese or tomatoes.

Pepita and courgette tortilla

You need:
2 eggs
a handful of pepitas
1/2 courgette
1 slice bell pepper
thyme
1 small clove garlic
salt

Throw everything into a blender, and then fry in coconut oil. Hmmm. I also added some cheddar as a topping, tasted a bit like a pizza.

De-worm food

Hello again.

After I finally found out that the blastos are not the main culprit for my problems, I found a way to deal with Mr. Enterobius.

Mr. Enterobius is a highly infectious parasite, and can get really, really nasty, since you can get new eggs into yourself by inhaling (they cling to dust), chewing fingernails, preparing food, and retro-infection.
Besides becoming a cleaning nazi and treating your whole family, including your pet with dewormers, there are some foods that he hates, and here is a list. For those who can stomach  raw facts, I will include some other tips at the bottom.

Foods that Enterobius hates:

Raw pumpkin seeds
Blanched almonds
Raw, fresh coconut
Stuns them and you might be able to purge some of them out, once you eat huge amounts of them.

Raw grated carrots and carrot juice.
Rich in fiber and vitamin A, and apprently, it works, don't ask me why. Can also be used before a purge.

Pomegranate seeds and pomegranate juice (no sugar)
Drink 200ml, twice or 4 times daily. Expensive, though.

Papaya and papaya seeds, pineapple
Have the enzymes papain and bromelaine, that can digest the skin of them.
Papaya seeds taste peppery.

Yoghurt: rich in good probiotics, and worms hate probiotics.
Cloves: best fresh, non-irradiated, freshly ground. Consume however you can around 1 tsp a day, to kill eggs. I make a shot with orange juice, so I dont have to taste it.
Cayenne pepper: powerful, can even slice up a tapeworm. consume at least 1/2 tsp a day. I mix it with the cloves into the shot. I drink two of those shots daily (split the amounts) , one before breakfast and one before dinner, and cool down with some yoghurt.
Thyme: some people like to drink tea from fresh thyme, but not me. I just add it to my dishes anyway.
Turmeric, asafoetada, garlic, cinnamon, black pepper: all very nice and spicy, and they hate it. Make more curries, more often ;)
Diatomaceous earth, food grade: some people say it cuts them into pieces, other say it will force the worms into other organs. I take it anyway, I think it helps, and vets use it for animals regularly. Do not inhale!!!!! I drink a tablespoon in either my pomegranate juice or in milk, 1-2 times daily

Other helpful advice to kill enterobius:

The pregant ladyworms carry tons of eggs, so get rid of them. They lay eggs preffered around full moon, at night, on your skin around the anus. they can even acidentally get into your female bits, so make sure to kep them out, else it will turn really, really nasty. To keep them from wandering: Put a garlic clove into a jar of vaseline. spread this over your anus, every night. Remove carefully first thing in the morning. In some very bad cases, cover a clove of garlic with vaseline, use as suspensorium.

If they have laid eggs, it will itch. Do not scratch. You will spread them. To keep yourself  or kids from scratching overnight, wear gloves.
Shower immediately after waking up. They hate warm soapy water.
Change undies daily, and treat as hazardous material. Wash at 50 degrees, use dryer if possible. If not possible, hang them outside to dry in the sun. Eggs die in sunlight. Else they keep viable for 3 weeks :(

Wash bedsheets and Pjs as often as you can, vacuum regularly every 2-3 days, desinfect the loo, and clean doorknobs, lightswitches with alcohol or bleach.
Keep fingernails short. Wash hands too often. Do not pick your nose, they can grow there, too.

Medications: 
There are lots available.
Mebendazole and pyrentel pamoate/embonate are the most common ones. Take them but do not expect wonders. If you have a lot worms, this can hurt as hell. Take them, but one dose won't be enough, so make sure to take it regularly, every two weeks, and mix them up! I had 2x mebendazole, the next turn I will use pyrentel pamoate. And then...either I go back to mebendazole, or try a commercial available de-worm tincture for a while (cloves, wormwood, cayenne, golden seal...). Or mybe I can get my GP to give me albendazole or thiabendazole or whatever else.
If symptoms lessen, do not think it is over! They can be still there, so it doesnt hurt if you take de-worm medications once a month before full moon for 6 months. This is what I will do. Never again.

De-worm Lassi 1

Hello again,
today I want to tell you how I make my latest favourite food of the day (scd legal, even!)

You need: 
SCD legal yoghurt
Fresh papaya
For tasty variations: fresh ginger, fresh mint, honey...

I simply throw 1/4 peeled papaya inclusive seeds (yes, leave them in!) and the yoghurt with a tad filtered water into a blender. 

The lassi will not be smooth or sweet (unless you add honey), but will have a refreshing and peppery taste.
You can also use this as a yummy salad dressing.
The seeds have an enzyme called papain in them, they are able to digest the for us undigestable wormskin. Aditionally, they have a mild laxative ability. The important thing is that you drink it daily, on the long term, to get rid of the bugs. Some people recommend a three to four day papaya and pineapple only fast, but I cannot do that yet. Pineapple is still too strong for me, but I will post recipes as soon as I will add it in bigger amounts.

Pumpkin muffins

This is an easy recipe, and it involves only pumpkin, eggs and cinnamon.
You need: 4 eggs, 4 cup of pumpkin, 1-2 teaspoons of cinnamon, and a tiny pinch of baking soda (tiny!!! else: soapy taste)
Mix it in a blender, grease up you muffin baking tray. Fill the tray with the batter, heat up your oven to 150°C, and bake for 30-40 minutes.
I eat mine warm (microwaved for a few seconds) and with a chunk of butter.

Bla, bla, blastocystis is not a pathogen, bla.

Hello all,
I need to write about the stubborness of GPs and specialists, and post linke to prove them wrong. 
They all pray the same mantra: Blastosystosis is not a pathogen. 
Uh-huh. I am in my 13th month of ppain, and it was the only thing they found so far, after I made an overpriced stool test to finally get a diagnose.

But with the diagnose, the trouble are still not over, since one of the parasites they found is called Blastocystis homnis, leading to a disease called Blastocystosis.
GPs and specialists shut their eyes about the increasing Problem.

IT IS a pathogen, and even linked to colon cancer, thank you very much.
And closing your eyes wont make it go away. Go to your GPS, shove the papers into their faces and tell them to at least read through it, and then ask them, if it is no problem, why all of these people see relief once the bugs are gone?

Spinach and Brie Omelett

OMG! I dared to ty out spinach...and as long as I keep the amounts small (3-4 leaves), it doesnt hurt too much.

1egg
3-4 leaves fresh spinach
1/4 Brie or blue cheese
Nutmeg
some Ghee

Melt ghee in pan, fry small cut spinach until done (it will turn all dark green, soft, small). Add some nutmeg to the beaten egg, add to spinach, mix and then let it settle. Sprinkle with pieces of brie or blue cheese, put a lid onto the pan, so the cheese gets soft while the egg sets.
Serve.

Pumpkin pie custard (honey free)

You need:
1 small pie form for the oven (I make only a tiny tiny amount, about one cup)
2/3 cup cooked pumpkin
1/3 cup SCd legal yoghurt
1 big egg
cinnamon, cloves, cardamom, nutmeg (lots of all)


Blend in blender, pour into form, bake at 160°C for 40 minutes or until knife comes out clean.

Pancakes...the other kind of pancakes

I have found a couple of pancake recipes...but they taste different and are different. But I have to admit, I like them, since I slowly but surely cannot eat chicken drumsticks anymore.

Chicken pancakes:
1 cooked chicken breast, 2 eggs. Put into blender, season however (I just add salt), fry in pan, done.

Avocado pancakes:
1/2 avocado, 1 egg: put into blender,  season, fry in pan.

Pumpkin pancakes:
1/2 cup cooked pumpkin, Cinnamon, a tiny bit of vanilla essence, 1 or 2 eggs. Blend, fry.

 Important: do not add baking soda! they taste like soap if you do :/

Spiced Tea


I love chai tea, but I cannot have milk and tea yet other than black. So I use this instead:

1 bag of black tea
1/2 cup of almond milk
spices: fresh ginger, cinnamon, nutmeg, cloves, cardamom, black pepper

Heat up the almond milk in the microwave, boil water in the kettle. Add the black tea, and the spices, infuse for 1 minute, then take the bag out. Voila!

Almond milk

You need:

a blender
200g fresh dried, unroasted almonds
1 l filtered water
a nut bag/ tea towel and a colander


First you need to get rid of the skins. You boil the almonds for 1 minute, then take them out. The skin is now very easy to peel off.
Then you soak the almonds over night. Discard of that water. Put the almonds and the filtered water into the blender and blend very fine. Pour the liquid into the nutbag or in the colander with the tea-towel to strain the liquid. Feed animals with the leftover nut fiber of use it in your garden. The milk will keep 3-4 days in the fridge. You can also make nut milk yoghurt, but I haven't done it yet.

Pumpkin custard

I am craving for sweets, but the parasites make this difficult because they just love sugar.
My solution atm: pumpkin custard. I plan on baking a pumkin pie, but not yet.

You need:
cooked and pureed pumpkin (butternut tastes best)
unsalted butter
lots of cinammon

Put how much you like in a bowl, heat up in the microwave and done. I serve mine with some spiced tea.

SCD legal curries

Another one of my favourite foods atm: Curries.


You need:
mince meat (any will do)
a few tablespoons of pureed veggies (pumkin is awesome, but I works very nicely with spinach, too)
1 tablespoon yoghurt
Spices: turmeric, cardamom, cumin, nutmeg if with spinach, cinnamon if with pumkin, chilli, scd legal curry mix, cloves, black pepper...
Ghee
(3-4 cloves of fresh pressed garlic if you need to get rid of parasites, fungus or bacteria like me, but leave it out if you suffer from crohns or celiacs!)

Heat ghee in a big pan, fry the meat and add the spices. Add some water or stock, and then the veggies. Serve with yoghurt if too spicy and with fresh garlic as antibiotic.

Amazing Egg Bread

I still need to eat TONS of sausage to get my daily fill, but I found out that I am not reacting to eggs anymore, which is a huge relief.
I found this amazing recipe on pecan bread and tweaked it a tad.

You need :

1 boiled chicken breast
5 eggs
1/3 cup pureed and cooked veggies (I use carrot and courgette, but works fine with others, too)
1 tablespoon oil
1teaspoon baking soda
1 pinch of salt
1 pinch caraway (i love caraway!)

Put it all in a blender and blend it until fine. Fill into either muffin forms or cake tray, and bake at 160°C for 45/60 minutes. It tastes really close to bread! I love it with tons of butter (my newest snack, lol)

Roasted chicken

Hello all,

I found a nice and SCD legal way to make a roasted chicken, and thought I should share the recipe.

You need:
carrots or pumkin
a whole chicken
one lemon
olive oil, thyme, paprika powder, salt, pepper

Wash the chicken and dry it. Put the lemon into the cavity. Blaze the chicken with olive oil mixed with the spices. Heat up oven to 200°C.
Cut pumpkin or carrots into chunks, and put into a tray (I used a glass roasting tray).
Put the chicken on the top grill, and the tray with the veggies directly underneath. Add some water to the veggies (a few tablespoons are enough).
Roast the chicken for 1 hour, turn on the grill for the last 5-10 minutes for crispy skin.
The veggies will be cooked enough to mash after this time, too.

Thyme sausage

Original recipe here, from SCD lifestyle

I took:

1/2-1 kg of beef mince (premium or prime, or both)
1/2-1 kg of pork mince
some teaspoons of water
1 tsp thyme
1 tsp salt
1/2 tsp pepper
turmeric, paprika powder or cinnamon, or all three, or none of them

Mix well in a huge bowl.


Grease up a bread baking pan (the long ones for banana bread) and fill up with the mince mix, press in evenly.
Cover with some tinfoil, so it won't dry out.
Heat up oven to 300° Fahrenheit or 150° Celsius, and bake for 3 hours.
Take out, let it cool down, put in fridge or freeze away in small batches.
Fry slices in coconut oil or olive oil before eating.

My Bf stole some of it , added some gravy and pasta, and ate everything up even though he had planned to take leftovers with him for the next day.

4 days of pumpkin


Hello all,

As I said before, I had huge troubles. For a year. Big stabbing hot pain, bloating to the point that I looked like 9 months pregnant.
And when I got m diagnose, I went onto the intro diet...but it didnt really work. It improved things, but not...really.

Until I decided: " alright, lets do this the hard way: 4 days of meat and pumpkin. "

Oh my. I was scared. But it worked! No kidding!

So here is what I ate:

Breakfast: thyme sausage, self made, fried in coconut oil or olive oil
Lunch: either sausage, broiled beef patties, chicken or beef soup with 2-3 teaspoons of cooked and pureed buttercup or butternut pumpkin.
Dinner: see lunch.

Boring? Not at all!

I cooked the beef patties, the chicken soup and the pumkin according to the rules of the intro diet.
But the cooked pumpkin is awesome. I spiced it up to whatever I wanted, and I did the same with my beef patties. I had beef patties with cinnamon, beef and pork patties with either paprika or turmeric and black pepper, chicken patties or even lamb.
I also spiced my pumpkin: sweet cinnamon pumpkin for breakfast (leave out salt), spicy curry pumpkin (salt, pepper, turmeric, cumin) or I put it into the soup.
I also had some beef schnitzel and a great steak, just with salt, pepper, and pumkin mash on the side.
I ate LOTS of meat. Meat is less dense in calories, so you need to eat more to have enough energy for the day. I also ate spoonfuls of coconut oil to get more calories in.

And I ate lots of thyme sausage. I like this stuff.

Since I still had no antibiotic, I took a probiotic. It is not SCD legal, but it didnt give me too much trouble. I took Natrens superdophilus, which is lactobazillus acidophilus, and took 1/4 tsp every evening before I went to bed for a week. Then I doubled the dose to 1/2 tsp the next week. I also prepared self made Kefir from lactose free milk and took 1 tsp every evening, too. Kefir is a stronger natural probiotic than yoghurt. I had some bloating, but since I slept, I had no big troubles in the mornings and all day.
additionaly, I took GI proZymes as enzymes, 1 peppermint oil capsule 30 minutes before meals, and one or two capsules of betaine HCL to help with the meat digestion. I didnt like it, and I have no idea if it helps or not, but since you cannot test your HCL levels here in NZ, I didn't care. Once the bottle is empty, I wont buy again.

Try it out, it will improve a lot of your symptoms.

The Big Change


Hello my dear readers.

I finally got diagnosed with baterial overgrowth, and went onto a new diet. I was sceptical at first, and it didn't really seem to work. I learned that I had to tweak it, bend it, until it fit me...and suddenly it started to work out! I finally improved! The last three days were amazing! I feel...awesome!
But that means I have to tweak this page too.

No worries, I will still post recipes that I will find, on the web or elsewhere, as well as information about what I do to heal my poor gut. But I will only do this in english. But, if you want the recipes in german, send me an email and I will do so :).

First a few words about this new diet.

It is called "special carbohydrate diet" and got invented by Elaine Gotschall in the late 1950s.
She wrote an awsome book called "breaking the vicious circle", and I strongly recommend reading it. Don't think: "hey, that isnt for me, that is for Crohns/celiacs/autism" because, actually, it is for much more medical problems. I am not kidding. It can help patients with IBS, Colitis Ulcerosa,Crohns, Celiacs, Malabsorbtions, Fybromyalgia, Diabetics and Obesity. And, according to all the pages I found on the web, even with depression and psychosis.

I had nothing to loose, so I did it. And, it is not a diet for short term, it is a more healthy lifestyle. I rather cook a lot and eat differently for the rest of my life, if I have to or want to, than feeling sick again. Seriously.
Give it a try, for 30 days. Write up your daily food and symptoms, be moderate in your intake.

This is the original page for the SCD intro diet. It is important that you do the intro, because it kills off some bugs and gives you a headstart into this diet. But remember, you might have to tweak it! Some of us cannot have the yoghurt yet (too much casein, too man live probiotics),
some cannot have honey,grapejuice, or eggs, or hate carrots....
I will tell you in the next post how I managed my 3 days of meat and pumkin only.

Spanish Tortilla / Spanische Tortilla

500-750 g potatoes

3-5 big eggs

Olive oil

Eventually things you want to add for taste: olives, thuna, dried tomatoes, red capsicums, bacon…else leave it out for a basic tortilla

Long version (tastes better)

Peel and cut potatoes in either small cubes or thin slices. Heat oil in a big pan and fry potato cubes slowly until they are tender.

Faster version (not too bad)

Have leftover boiled potatoes, or boil them with the skin left on, peel and then cut.

Let potatoes cool down a bit. Whisk eggs, add salt and whatever else you want to put in, add the potatoes, mix until everything is covered, then pour back into the heated pan. Let the eggs set, remove edges from the pan, it should look firm but not completely set. Let the tortilla slip from the pan onto a plate, then return it back into the pan, from the other side (eg: turn it around)

Another trick: use two pans. Or put plate onto the pan, turn around, let it slip back, whatever works (needs training).

Let it set now for a tad longer (a few minutes). Serve with lettuce, hot or cold as a leftover.

500-750 g Kartoffeln

3-5 große Eier

Olivenöl

Was man sonst noch dazufügen möchte: Paprika, Oliven, Dosenthunfish, getrockenete Tomaten, Speck...ansonsten weglassen für die Originalversion,

Lange Version (schmeckt besser)

Kartoffeln schälen und in dünne Scheiben oder kleine Würfel schneiden, Öl in einer beschichteten Pfanne erhitzen, Kartoffeln langsam darin garen.

Schnelle Version (auch nicht übel)

Bereits gekochte Kartoffeln vom Vortag benutzen, oder Kartoffeln kochen, schälen, kleinschneiden.

Die Kartoffeln etwas abkühlen lassen. Eier verquirlen, Salz hinzufügen (und weitere Zutaten), dann die Kartoffeln dazu und alles mischen, so dass alles gut mit Ei überzogen ist. In die erhitzte Pfanne gießen, stocken lassen. Die Ränder von der Pfanne lösen. Die Tortilla sollte aussen fest, aber in der Mitte noch etwas flüssig sein. Nun die Tortilla auf einen Teller rutschen lassen, umdrehen, zurück in die Pfanne. Andere Methoden: eine 2. Pfanne benutzen, Teller auf die Tortilla legen, rumdrehen, zurück in die Pfanne. (braucht alles Übung). Die Tortilla weiter stocken lassen (ein paar Minuten). Mit Salat servieren, warm oder kalt, zum mitnehmen. Spanier belegen auch Brötchen damit.

Cook rice, make eggs sunny side up, put over rice, heat up tomato with some herbs and spices, put over rice, too.

Done.

Reis kochen, Spiegeleier braten, zum Reis auf einen Teller tun, Dosentomaten mit ein paar Kräutern würzen und erhitzen, über den Reis geben, fertig.

Eggs in mustard / Eier in Senfsoße

cooked rice

Cornstarch

Hardboiled Eggs

Dissolve some cornstarch in cold water or cold stock, bring it to boil to thicken it. Add a good dose of mustard (you really need to taste it). Peel and cut eggs into small pieces, add to the mustard sauce and heat it up. Add salt and pepper if you need to.

Serve with rice.

This is a typical “pantry is empty” dish.

Hartgekochte Eier

Etwas Maisstärke in kaltem Wasser oder Brühe auflösen, aufkochen zum eindicken, eine gute Portion Senf dazurühren (man muss den Senf gut rausschmecken). Eier schälen und kleinschneiden, in die Soße werfen und erhitzen, abschmecken, mit Reis servieren.

Dies ist ein typisches „Kühlschrank ist leer“ Gericht.

Gnocchi

1 kg potatoes, favourable salad potatoes

500g potato flour

100g corn flour, gritty ( I used masa)

salt

(If it is not sticky enough, add one eggyolk)

Cook potatoes, then mash them (food processor works best, or a ricer)

Mix with flour, salt and grits to a firm dough

Form little balls / walnut sized

If you want to freeze some, do that before cooking them!

Else: throw into boiling water. When they swim on top, they are done.

Serve with whatever you like: gravy, pumpkin sauce, tomato salsa, cheese sauce…

I served mine with a tuna – silver beet salsa. Or a mince meat carrot sauce.

You can also mix in some pumpkin, diminish the potato amount in that case and add the egg yolk.

1 kg Kartoffeln, vorwiegend festkochend

500g Kartoffelstärke

100g Maisgries, ( ich habe masa harina genommen)

Salz

Wenn der Teig nicht fest/ klebrig genug ist, kann man noch ein Eigelb beifügen

Kartoffeln kochen, schälen und durch die Kartoffelpresse drücken

Mit Mehl, Gries, Salz und eventuell Eigelb zu einem festen Teig verkneten. (ist trotzdem locker, darf aber nicht auseinanderfallen!

Kleine Bällchen formen.

Wenn man die Gnocchi einfrieren will, sollte man das jetzt tun, vor dem kochen!

In heißes Wasser werfen. Wenn sie oben schwimmen, sind sie fertig.

Mit allem, was man mag, servieren: Butter, Käsesoße, Kürbissoße...

Ich aß meine mit Thunfisch-Mangold Soße. Und mit einer Hackfleisch-Karottensoße,

Man kann auch einen Teil der Kartoffeln durch Kürbis ersetzen, dann muss man aber das Eigelb hinzugfügen J

Carrot soup (+ tasty varieties) / Karottensuppe (+ leckere Abänderungen)

Base:

2 potatoes, medium

4 carrots

Stock or water (I use salted veggies, a german recipe for stock)

Cut carrots and spuds into pieces, cook until soft, the puree them and put the base soup back into the pot.

Type 1:

Add some milk, soysauce, pepper or tabasco and cut safe beersticks (or fried bacon pieces) into pieces, add to soup, heat it up and enjoy.

Type 2:

Add some milk, peanut butter and chilli flakes, enjoy.

Type 3:

Cook some ginger with the veggies, add some orange juice, curry powder and coconut milk to spice it up.

Serve with toasted bread.

Basis:

2 Kartoffeln, medium

4 Karotten

Brühe , zum bedecken (ich benutze eingesalzenes Gemüse)

Karotten und Kartoffeln in Stücke schneiden, mit brühe bedecken und weichkochen. Das ganze mit dem Stabmixer oder im standmixer pürieren, wieder in den Topf schütten.

Version 1:

Etwas Milch, Sojasoße oder Maggi, Pfeffer oder Tabasco hinzufügen, sichere Mettenden, Pfefferbeisser oder geräucherten Schinkenspeck dazu, gut aufwärmen.

Version 2:

Etwas Milch, Erdnussbutter und Chilli dazu.

Version 3:

Etwas frischen Ingwer mit dem Gemüse mitkochen, mit Orangensaft, Currypulver und Cocosnussmilch abschmecken.

Mit getoastetem Brot servieren

1.75 kgs safe veggies, eg: celery, parsnip, carrots, some fresh herbs (parsley, lovage, chives…), some green spring onion stalks (not too much, annoying taste!)

250g salt

Cut veggies into pieces, then put into food processor/ mixer and slice/ puree them to a very fine mush. Then mix good with the salt, and put into clean glass containers.

It will keep in he fridge pretty long, thanks to the salt.

I use a tablespoon of this mix for soups instead of stock.

1,75 kg sicheres Gemüse , also Sellerie, Pastinake, Möhren, frische Kräuter (Petersilie, Schnittlauch, Liebstöckel...) ein bisschen Frühlingszwiebelgrün (nicht zu viel, schmeckt sonst zu penetrant)

250g Salz

Das Gemüse kleinschneiden und in der Küchenmaschine gut zerkleinern, mit dem Salz gut mischen und in saubere Einmachgläser füllen.

Die Mischung hält sich dank Salz sehr lange im Kühlschrank, ich benutze einen Löffel davon statt Suppenpulver.

Quick and easy rice noodle tortilla / schnelle und einfache Reisnudeltortilla

I used:

50-100g thin rice noodles

1 small grated carrot

¼ cup mung bean sprouts

2 leaves silverbeet

1 tsp soy sauce

3-4 eggs, lightly whipped

Pour hot water over the rice noodles and let them sit for a while.

Drain them, and mix them with the other ingredients. Heat a big pan with some oil, pour the mix in, and let it set. If possible (and you know how to do it), flip the tortilla to cook it on the other side. If not, put the pan into the preheated oven and let it finish setting there. You can also pour the mix into a muffin tray to bake.

Cut into pieces to serve.

You can also add different veggies, like spinach, red pepper, thuna, bacon, dried tomatoes…

Or make it the original Spanish version, with cooked and sliced potatoes, and serve with a salad.

It is also delicious cold, for lunch.

Schnelle Reisnudel Tortilla

Ich nahm:

50-100g dünne Reisnudeln

1 kleine geraspelte Karotte

¼ Tasse Mungo Bohnen Sprossen

2 Blätter Mangold

1 tl Sojasoße

3-4 Eier, geschlagen

Reisnudeln mit heißem Wasser übergiessen und ziehen lassen.

Abgiessen und mit den restlichen Zutaten vermischen. Eine große Pfanne mit Öl erhitzen, die Mischung reingiessen, und stocken lassen. Wenn möglich (und venn man weiss wie)den Fladen umdrehen, und die andere Seite auch anbraten. Wenn nicht, man kann auch eine ofenfeste Pfanne in den Ofen stellen. In Tortenstücke schneiden zum Servieren.

Man kann die Mischung auch gleich in ein Muffin Blech giesen und backen.

Oder man nimmt andere Zutaten, wie Spinat, rote Paprika, Thunfisch, Speck, getrocknete Tomaten…

Oder man nimmt die original Spanische Variante aus gekochten Kartoffeln und Ei, mit einem Salat serviert.

Sehr lecker auch kalt, zum mitnehmen.

Pad Thai : Awesome recipe! Grandioses Rezept!

I just had one of my favourite dishes again: Pad Thai.

OMG, how I missed that. But I didn't create it, I found it on the blog of another awesome person with DFI.

Ich habe gestern eines meiner Lieblingsessen wieder gemacht: Pad Thai.

Oh, wie ich es vermisst habe! Aber das Rezept wurde nicht von mir kreiert, sondern von jemand anderem, sehr nettem, der auch unter DFI leidet.

Bitte folgt diesem Link zum Originalrezept. Es ist auf Englisch, und wenn es jemand übersetzt haben will, bitte bei mir melden und ich stelle es ein.

Bread Nr. 2/ Brot Nr. 2

Since I am slowly increasing my fiber uptake, I decided to add something into my bread.

In a nutshell, I simply took the recipe for the rolls, and instead of 500g flour mix, I used 350g flour mix and 150g Buckwheat flour. And I added 1 teaspoon linseeds.

I put it all into my bread baking machine, and since I use gluten instead of gums, I choose the basic program.

The result was delicious. It is moist, so I don’t have to toast it to eat it.

Da ich meine Ballasststoffaufnahme langsam erhöhe, habe ich mich entschlossen, mein Brot zu verändern.

Im Großen und Ganzen habe ich einfach das Rezept für Brötchen gewählt, und statt 500g Mehlmix nur 350 g genommen, und die fehlenden 150g durch Buchweizenmehl ersetzt. Zusätzlich habe ich noch einen Teelöffel Leinsamen hinzugefügt.

Ich habe meine Brotbackmaschine benutzt, und, da ich ja Gluten nehme, das ganze Auf basic eingestellt.

Das Ergebnis war lecker. Das Brot ist auch schön feucht, man muss es nicht toasten, um es zu essen.

Easy Pumpkin Curry / leichtes Kürbis-Curry

You need:

300g or more pumpkin

2-3 stalks of onion greens

quite a lot pine nuts (I used a handful)

Canola Oil

50ml Safe stock

50ml LF yoghurt

Curry

Turmeric

Salt, pepper

Cut the Pumkin into small pieces.

Roast pine nuts in oil-free pan, then put aside.

Heat oil in pan and roast pumpkin for 5 minutes. Add curry and turmeric, roast another minute. Add stock and yoghurt, cook for 3 minutes, then add diced onion greens and cook another 3 minutes. Season, add pine nuts, and serve with rice.

Man nehme:

300g oder mehr Kürbis

2-3 Stängel Zwiebelgrün

eine ziemliche Menge Pinienkerne (ich nahm eine Handvoll)

Rapsöl

50ml sichere Brühe

50ml Yoghurt, LF

Curry

Kurkuma

Salz und Pfeffer

Den Kürbis in kleine Würfel schneiden, das Zwiebelgrün auch.

Die Pinienkerne ohne Öl in einer Pfanne rösten, dann beiseite stellen.

Öl in der Pfanne erhitzen und Kürbis 5 minuen anbraten. Curry und Kurkuma hinzufügen, eine Minute mitrösten. Joghurt und Brühe dazu, 3 Minuten köcheln lassen, Zwiebelgrün dazu, 3 weitere Minuten köchen lassen. Würzen, Pinienkerne dazu, mit Reis servieren.

Common mistakes with the FODMAP diet / Übliche Fehler bei der FODMAP Diät

I did, like a lot of people, make mistakes with this diet when I started this journey.

Some where because I trusted things that were not tested yet by the Monash University, and others because I didn’t know better.

Common mistakes:

Eating things that are not safe :

Soy (it is a bean, so it will have galactanes. Soy sauce is fermented, and therefore, alright.),Barley, Pistachios and Almonds, etc.

These things will cause big outchies. We now know why. They were recently tested and proved to be bad.

Or to eat something that someone offered, without asking for the ingredients. Or eating it although it is unsafe, just to be nice. No comment.

Trying to get rid of all the things that cause trouble at all, or trying to eat as minimal as possible, to get the symptoms to go away for at least three days

Not possible. Really. You get symptoms from bacteria dying off, so in the end, you just killed your good bacteria. Congratulation. You will now react to things that used to be safe.

Stopping the diet after less than one week because it didn’t get better yet, or it was even worse than before.

Symptoms are expected to increase after that big change in your diet. The bad bacteria will die off, the good will grow, and that is why you get symptoms.

The thing is, it is normal to react against fiber. You might remember the bloating when you ate beans or even pumpernickel after a long time of no beans or white bread. This is the same. This means, you now react even against tiniest amounts of fiber. But you have to get used to it again. Keep eating it! Normally, after around two weeks, it will get better because your flora has adapted.

That is the reason for the low FODMAP diet, to get rid of the overdose of fiber (in our case, fructose is a fiber, too), and start increasing the intake of low amounts of fiber for a while, and then re-introducing the offending FODMAPS so slowly that you will not get into trouble.

In a nutshell: if you are very sensitive, start with tiny amounts of fiber, and expect some trouble for a few weeks. Then increase the fibers, one by one.

And keep it up for a few weeks, do not give up or even reduce more!

For example: if you cannot eat oats, hide one in your muesli for week, daily. Then two. Then three…I am already at a teaspoon of oats, daily. Same with Kiwifruit. Start with 1/8, then increase after a while.

I just had 5 cashews in my lunch. CASHEWS! It would have killed me last week, but now it only pinches a bit more. IT IS TOTALLY WORTH IT! I promise.



Ich habe, wie so viele Andere auch, beim Beginn der Diät Fehler gemacht.

Einige Fehler weil ich darauf vertraut hatte, das Lebensmittel sicher waren, obwohl sie von der Monah Universität noch nicht getested wurden, und andere weil ich es einfach nicht besser wusste.

Die Fehler sind folgende:

Unsichere Lebensmittel essen:

Soja (ist eine Bohne, also hat sie galactane. Nur in fermentierter Version sicher, wie in Sojasoße),Gertste, Pistazienm Mandeln, usw.

Diese Dinge verursachen große Probleme, wir wissen ja warum. Mittlerweile wurden sie getestet und als schlecht beurteilt.

Oder auch schön: etwas essen, was einem angeboten wird, ohne nachzufragen was drin ist, oder ohne es abzulehnen, obwohl z,B, Zwiebeln drin sind. Ohne Kommentar,

Versuchen alle Dinge zu beseitigen, die Probleme verursachen, oder so restriktiv wie möglich zu essen, um alle symptome für mindestens 3 Tage zu beseitigen.

Unmöglich. Wirklich. Man bekommt Symptome, wenn Bakterien absterben oder welche wachsen. Nur hat man nun, auf längere Zeit, die guten Bakterien ausgehungert, Gratuliere. Du wirst nun auf sichere Lebensmittel reagieren.

Mit der Diät nach weniger als einer Woche aufhören, weil die Symptome nicht weniger wurden, oder mehr.

Es ist zu erwarten, dass man reagiert. Die schlechten Darmbakterien sterben ab, die guten wachsen. Das ist der Grund, warum man Syptome bekommt, so oder so.

Die sache ist die, es ist normal, dass wir auf Ballaststoffe reagieren. Man erinnert sich vielleicht daran, als man Chilli oder gar Pumpernickel gegessen hat, nach einer langen zeit ohne Bohnen oder nur mit Weissbrot. Das hier ist genau dasselbe.

Aber wir reagieren nun eben auf winzige Mengen Ballaststoffe. Wir müssen uns nur wieer daran gewöhnen. Also esst weiter! Normalerweise hat sich die Darmflora nach ungefähr zwei Wochen angepasst.

Das ist auch die Funktionsweise der FODMAP Diät: man wird die Überdosis an Ballaststoff los (in unserem Fall wirkt Fruktose wie ein Ballaststoff, weil wire s nicht verdauen), erhöht dann die Ballaststoffaufnahme langsam über eine gewisse Zeit, und am Ende führt man die problematischen Dinge wieder ein, langsam und in kleinen Mengen, um sich wieder daran zu gewöhnen, ohne Schmerzen.

Wenn Du also sehr empfindlich ist, beginn mit kleinen Mengen an Ballaststoffen und erwarte einige Probleme für ein paar Wochen. Und dann erhöhe die Dosis langsam. Und bleib dabei, und las Dich nicht dazu verlocken, damit wieder aufzuhören!

Ein Beispiel: Wenn du zur Zeit auf Haferflocken reagierst, verstecke eine in deinem Müsli. Täglich, für eine Woche. Dann zwei, drei…ich bin bereits bei einem Teelöffel Haferfloken täglich. Oder Kiwis: beginn mit 1/8 täglich, dann erhöhe die Menge.

Ich hatte gerade 5 Cashews in meinem Mittagessen. NÜSSE! Letzte Woche ware ich daran geplatzt, aber diese Woche pieckt es nur ganz unangenehm. ES IST DIE ARBEIT WERT! Versprochen.

FODMAP-safe plain white Rolls/ FODMAP-sichere helle Brötchen

Flour Mix:

2 cups glutinous rice flour

1 cup Potato starch

1 cup tapioca starch

500g flour mix

400 ml warm water

1 tsp psyllium

2 tbsp canola oil

1-2 tsp salt

1 tsp sugar

1 tbsp Vinegar

2-3 tsp dry active yeast

2-4 tsp gluten or gum

mix everything in a bowl, whip it for 5 minutes with the electrical mixer, form rolls or put dough into muffin forms.

Heat oven up to 45-50°C, let dough rise for 30-45 minutes.

Put a heat proof bowl with water inside oven and heat up to 250°C.

Sprinkle rolls with flour or sesame or poppy seeds or chia…and bake for 15 minutes.

They can be a bit dry, but toasted they are not too bad.

Mehl Mix:

4 Tassen Klebreismehl

2 Tassen Kartoffelmehl

2 tassen Tapioka Mehl

500g Mehl Mix

400 ml warmes Wasser

1 TL Flohsamenschalen

2 EL Rapsöl

1-2 TL Salz

1 TL Zucker

1 EL Essig

2-3 TL Trockenhefe

2-4 TL Gluten oder Xanthan/Guarkernmehl

Alles zusammen in eine Schüssel füllen, mit dem elektrischen Mixer 5 Minuen lang Kneten, Brötchen formen oder in eine muffinform füllen.

Ofen auf 45-50°C heizen, Den Teig für 30-45 Minuten gehen lassen.

Eine Feuerfeste Schüssel mit Wasser in den Ofen stellen und Ofen auf 250°C heizen.

Die Brötchen mit Mehl, Sesamsamen, Mohn, Chia oder Kürbiskernen...bestreuen und für 15 Minuten backen.

Sie sind ein bischen trocken, aber nicht übel wenn man sie toastet..

Asafoetada and ghee or Garlic oil

Tumeric

Salt

Pepper or chili

Sliced ginger

Heat up a frying pan with oil or ghee, add a tiny amount of asafoetada, add the meat or fish and fry it. Then add the fresh ginger and the spices, let them fry for a minute.

Then add the spinach, let it shrink. Then add milk and tomato for moisture.

Pour this over rice. It was the closest I could get without bringing me into trouble, and damn, it was good.

2 EL Dosentomate, stückig oder passiert

Koriander

Garam masala

Kardamom

Asafoetada und Ghee oder Knoblauchöl

Frischer Ingwer, geschnitten

Eine Pfanne mit Öl oder Ghee erhitzen, eine kleine Menge Asafoetada dazu, das Fleisch oder den Fisch anbraten. Den Ingwer und die Gewürze hinzufügen und ebenfalls eine Minute anbraten.

Den Spinat dazu, bi ser zusammenfällt, dann die tomate und die Milch dazu, etwas köcheln lassen. Dazu Reis.

Das war das, was dem Original am nächsten kam, und es war sehr lecker.

Eine Pfanne mit Öl oder Ghee erhitzen, eine kleine Menge Asafoetada dazu, das Fleisch oder den Fisch anbraten. Den Ingwer und die Gewürze hinzufügen und ebenfalls eine Minute anbraten.

Den Spinat dazu, bi ser zusammenfällt, dann die tomate und die Milch dazu, etwas köcheln lassen. Dazu Reis.

Das war das, was dem Original am nächsten kam, und es war sehr lecker.

Safe Treats/ Sicheres Süßes

Hello again.

Yesterday I was craving for sweets. So I thought, lets talk about lollies etc.

Cookies:
- Eskal tea buisquits vanilla
- Eskal lemon wafers

lollies:
Everything from HARIBO! I am not kidding. They are a german lollie company, famous for their gummibears and liquorish snails. But they only use sucrose and glucose for their lollies, and no wheatstarch etc. And they are finally available here in NZ.

Dark Chocolate:
My favourite is Lindt and Ritter Sport. The Darker, the better. But only in small amounts, they can affect some of us.

Easy to DIY:
Marshmallows (mainly sugar, gelatine)
Meringue (eggwhites and sugar)
Coconut macarons (german christmas cookies: coconut, sugar and eggwhites)

Hello mal wieder.

Gestern hatte ich richtig lust auf Süßes. Also, dachte ich, reden wir heute mal über Süßigkeiten.

Kekse:
Leider kenne ich keine sicheren Kekse des deutschen Marktes.
- Eskal tea buisquits vanilla

Gummikram:
Alles von HARIBO! Kein Witz. Wir alle kennen die deutsche Firma dank der Gummibärchen und Lakritzschnecken. Sie benutzen nur normalen Zucker und Traubenzucker, kein Weizenmehl usw. Und es gibt sie auch in NZ zu kaufen!

Dunkle Schokolade:
Meine Favoriten sind Lindt und Ritter Sport. Je dunkler, desto besser. Aber nur in kleinen Mengen, da einige von uns darauf reagieren.

Einfach selbermachen:
Marshmallows (hauptsächlich Zucker und Gelatine)
Meringue/ Baiser (Eiweiss und Zucker)
Kokosmakronen (Kokosnuss, Zucker und Eiweiss)
Haferkekse
