Spring is here (okay, autumn on the northern hemisphere, sorry), and what is better to springclean your body than Asparagus?
You need:
1 bunch of aspargus
1-2 big carrots
1-2 courgettes
some green beans or peas
1 egg per person
garlic and some fresh chives
salt and pepper
Boil eggs until hard, peel and put aside.
Wash asparagus, cut off the bottom and peel the lower 1/3. Peel and grate the carrots, wash and grate the courgettes. Peel the garlic.
Heat oil in a pan, and add the asparagus and the beans (if you chose fresh ones), fry them gently for 5 minutes. Add garlic and other veggies, fry until golden.
Add salt and pepper, and serve with egg halves and sprinkle with chives.
Dig in!
