Hello all, after a three day pineapple only frenzy, I needed something with substance for breakfast. And since I am still reacting to honey, I made some bland (but still awesome) muffins.
You need:
1 cup almond and coconut flour (half and half)
2 eggs
1/4 tsp baking soda
1/2 tsp aplle cider vinegar
(1 Tbsp honey)
Mix all the liquid bits first, thenadd the dry, fill in 4 muffin trays. Bake at 170 for 12-15 minutes, let them cool down. I had mine toasted, with yoghurt cream cheese and cashew butter, alongside more pineapple.
You can also add some pineapple into the batter, if you like. After over 6 months of no bread etc., this was so awesome.
