OMG! I dared to ty out spinach...and as long as I keep the amounts small (3-4 leaves), it doesnt hurt too much.
1egg
3-4 leaves fresh spinach
1/4 Brie or blue cheese
Nutmeg
some Ghee
Melt ghee in pan, fry small cut spinach until done (it will turn all dark green, soft, small). Add some nutmeg to the beaten egg, add to spinach, mix and then let it settle. Sprinkle with pieces of brie or blue cheese, put a lid onto the pan, so the cheese gets soft while the egg sets.
Serve.
