Roasted chicken

Hello all,

I found a nice and SCD legal way to make a roasted chicken, and thought I should share the recipe.

You need:
carrots or pumkin
a whole chicken
one lemon
olive oil, thyme, paprika powder, salt, pepper

Wash the chicken and dry it. Put the lemon into the cavity. Blaze the chicken with olive oil mixed with the spices. Heat up oven to 200°C.
Cut pumpkin or carrots into chunks, and put into a tray (I used a glass roasting tray).
Put the chicken on the top grill, and the tray with the veggies directly underneath. Add some water to the veggies (a few tablespoons are enough).
Roast the chicken for 1 hour, turn on the grill for the last 5-10 minutes for crispy skin.
The veggies will be cooked enough to mash after this time, too.
